Perfectly Imperfect

I have been working on writing this piece for a while now. Kelsey Shaffor has inspired me in so many ways at her young age of 23. I first began seeing absolutly stunning photographs she captured of my two sons (Casey and Tanner) and their significant others (Alicia and Camryn) and then reading and really getting to know Kelsy. We have never met in person, but fell in love with her talent, beauty, bravery, strength and passion for photography.


Meet Kelsy, a 23 year old that finds her passion in life – photography. Kelsey says her life turned upside down in 2015 , she was diagnosed with brain cancer. In 2016 she had a craniotomy and AWESOME news, no cancer!

“Honestly, after going trough all that, I consider it a blessing. Why? It’s made me a better person. I view things in such a new perspective. I am more empathetic of others and I never take life for granted. the recovering process was and still is to this day a struggle. As soon as I woke up from surgery, I felt like a completely different person. It was insane! Like I said, I consider this whole situation a huge blessing. I finally found out who and what I’m supposed to do in life,”

Like Kelsy stated above, she’s able to view the world with a totally new and improved perspective. Kelsy realized life is far from perfect, but she also realized life is perectly imperfect. There for that is her motto. Kelsy loves kodak, one of  a kind moments, moments of pure laughter, love and above all that show the real ‘you’. She is all about those perfectly imperfect crazy beautiful moments. She aims for the moments that mean something, feel something. She’s far from poses and awkward smiles, but sometimes will crack the strangest jokes just to help make all the tension wash away. Most importantly she loves creating a relationship with her clients. Clearly it works. Not only does Kelsy enjoy photography, but she also enjoys watching Harry Potter over, over, over…..and oh, she loves Disneyland.

“I honestly love Disneyland so much. When I see little kids eyes light up with pure joy, I think its amazing. It’s moments like that we take for granted. Beacuse unfortunately life can change at any moments. So why don’t we live in the moment? As a photographer, that is my goal with my clients, to capture them in the moment. Most of the time I tell them ‘alright so you are going to run into each others arms and I dont care if you fall, because guess what… I’m going to capture it!’ and then we all laugh about it. But hey, it works!”

Thank you Kelsy for allowing us all to see your talent and view life through your lens. Its been an absolute honor and I look forward to see your amazing work in the future.

Stuffed with sautéed garlic, yellow onion, hatch peppers, mushroom stems, spinach, cherry tomatoes, bread crumbs and  parmigiana. Drizzled with Olive Oil.

Let’s Get ‘R Done

Can we just talk about “end of school year” for a minute??? I am exhausted and we are only 3 days into the month. I am preparing for Open House, Conferences and Mother’s Day gifts, meanwhile my students have come down with SPRING FEVER!!! 


Lets just give a little “Shout Out” to this gem that keeps me going!! I love that our Energy is:

Keep Busy, Empty Nester

So, I am fairly new at Network Marketing (two months), been Blogging for two and half years and Teaching Montessori for fifteen years. I have been questioned on why I decided to start a business when I already teach full-time and blog part-time.

Well, here is why. Lets just go back to when our four kids were at home in school, involved in sports, after school activities, etc… I was busy 24/7. Drop off/pick up at school and practices, running to 2-3 games on game days (mind you we had three boys on three different baseball teams) and a very social teenage daughter.
img_5288As each of our children graduated high school, left for college, moved out on their own, I began feeling unneeded, bored, a bit depressed. That is when I began blogging about fashion, family, fitness, wine country living etc.. It gave me an outlet to express and share the things I love.

Then last year after my youngest graduated high school I started researching Network Marketing and really became intrigued by the idea of being a business owner. I love the products and love being able to share them. I am contributing to our retirement, vacationing and helping out the kids more when needed. Last but not least I have met some amazing people that I call friends through this business from all around the country ( I hope to visit South Dakota someday) 

So, here I am busier than ever and loving every minute of it and still having the time to spend with my family. Also, realizing having our four kids ranging from 18 – 23 now is just a new phase of our family. They have all grown into exceptional adults and our bond is stronger than ever!

Cheers to being a blessed mom, wife, teacher, blogger and business owner.

Portobello Mushrooms Stuffed with Eggplant And Gorgonzola

With Thanksgiving right around the corner and the fact I do not eat meat other than fish, I’ve been on the search for a yummy alternative to turkey. To be quite honest I was never a fan of turkey anyway so it has been fun searching for something I would enjoy. I am very fond of the sweet potatoes, vegetable casseroles and mashed potatoes that are usually prepared on this day of Thanks.

On my hunt I came across this recipe and lets just say it has my mouth watering and I can’t wait to pair it with the traditional vegetable sides of Thanksgiving dinner.


6 6-inch diameter Portobello mushrooms
1/4 c olive oil
4 Japanese eggplants; chopped
6 tb tomatoes, oil-packed; chopped, drained
2 cloves Garlic; minced
1/4 c Dry Red Wine
6 oz Gorgonzola cheese; Crumbled
2 tb fresh basil; Chopped
1/4 c Grated Parmesan; fresh

Preheat oven to 375F. Arrange mushrooms, rounded side down, on large baking sheet. Heat oil in heavy medium skillet over medium heat. Add eggplant, sun-dried tomatoes and garlic. Saute until eggplant is soft, about 8 minutes. Stir in red wine and simmer until liquid evaporates, about 2 minutes. Remove skillet from heat; stir in Gorgonzola cheese and 1 tablespoon basil. Season with salt and pepper. Spoon mixture evenly into mushroom caps. Sprinkle with Parmesan cheese. Cover mushrooms with aluminum foil. Bake mushrooms for 15 minutes. Remove foil and continue baking until cheese melts, filling bubbles and mushrooms are tender when pierced with sharp knife, about 10 minutes. Sprinkle mushrooms with remaining 1 tablespoon basil and serve warm. Makes 6 servings.
